Who We Are
We are a local, independent, family owned and operated restaurant; opened in September 2016.
We believe in cooking from scratch, value for your dollar. We love laughter, creativity and following your passion. Luckily for us, we get to do what we love every day now at Croby's Urban Viddles. Our recipes come from family and friends as well as our own creativity. We rally from mistakes and look at them as lessons to make a better product. Well, eventually we do. Some of us (Shannon) take longer to rally. Haha.
We do things differently at Croby's.
-We believe in working as a team. The "kitchen" staff helps the "front" staff and vice versa. All employees are paid at least minimum wage based on their experience; plus tip share. Everyone except the managers and owners share those tips based on the number of hours worked that week.
-We believe in family mealtime. There are no TV's in Croby's.
-Our kitchen is open by design. We keep it clean and organized and welcome you to watch us prepare your food. Ask, and we will show you around. We are proud of our kitchen and glad to show it off.
-We encourage creativity and imagination by having a blackboard wall for everyone to draw on.!
-We welcome feedback. Good and bad. Truly. Criticism is hard to give and take, but we appreciate it as it helps us grow and be better.
So that's a little about our philosophy. Here's who we are...
Rob Campbell moved to Charlottesville in 2007 to take a job in corporate finance. In early 2016 he
decided to try something different and opened a restaurant with his sister Shannon. He brings finance and marketing skills to the Croby's team. He currently works full time off-site as the General Manager at Castle Hill Cidery in Keswick (and many shifts at Croby's wherever needed!).
Shannon Campbell moved from south Florida (Palm Beach Gardens, where she and Rob grew up) in 2015. She has been in the restaurant business for most of her life, working all positions FOH (Front of the House; hosting, waiting, bartending, managing) and BOH (pantry, line, and expo). She was with Panama Hattie's in North Palm Beach, Florida for 22 of those years.
Mike Marcinek, a cousin to Rob and Shannon, moved to C'ville in March 2016. Mike brings his own 25 years of restaurant experience to our team; working as a manager, bartender, and all positions in the kitchens of Outback, Carrabba's and Hop's. Hailing from the Lakeland, Winter Haven Florida area Mike has fallen in love with Charlottesville and now considers it home.
Thank you for your feedback, patronage, conversations and silly jokes.
We look forward to welcoming you to our table for many years to come!
Who Is Croby?
This is "Croby"; our Dad, Denny Campbell. His Uncle Matthew gave him that nickname when he was a young kid growing up in a small town in Kentucky. Our Dad HATES the nickname. Why? The town's ne'er do well was named Croby. So when my Dad would mess something up, his Uncle Matthew would say, "way to go Croby."
What better way to honor our father than to name the restaurant his most hated nickname? Haha. It took a while, but he has warmed to the idea and actually is delighted now. Just don't call him Croby.
But if he's in C'ville visiting from Florida... grab a seat, muss his hair, eat from his plate and take sips of his beer:)
Yeah, don't do that either. But do grab a seat and introduce yourself. He loves to talk and has never met a stranger. He's an amazing man, and we are honored that he's our Dad. We love you Dad!!
We do have a pretty spectacular Mom too. She just prefers to remain behind the scenes. She has given us recipes (Mama Lou's chocolate cake) and support in too many ways to list here. She is smart, beautiful, funny, loving and brave. Without her encouragement, Croby's would still be a dream, not a reality. We love you, Mom.
And it wouldn't be Croby's without Aunt Sandy. Mike's mom can be seen in the dining room on the weekends waiting on tables and happily chatting with everyone. She is the kindest and most thoughtful person and we love her too!!!
We have a pretty special family and consider ourselves very blessed.
